The Dumont-Alvarez family manages all three jointly today, with Eduardo Alvarez running El Borbollon mill and handling export. Seven growing regions climb volcanic slopes at 1,000–2,365 meters: Apaneca-Ilamatepec, the Central Belt, Chalatenango, Tecapa-Chinchontepec, Alotepeque-Metapán, Chinchontepec, and Nahuaterique. Mineral-rich volcanic soil runs through all of them. Bourbon dominates, with Pacamara and Pacas rounding out a varietal picture developed largely in-country.
