Finca La Providencia, located in Cantón Las Cruces, Chalchuapa, Santa Ana, at 1,480 meters above sea level, enjoys a tropical climate and has been managed by Café Pacas since 2007. The farm is divided into 10 plots named after Alfredo Pacas Sr.'s grandchildren and cultivates Bourbon, Pacas, Pacamara, and Geisha coffee varieties. Known for its exceptional quality, the farm includes a Research and Development garden with over 54 coffee varieties. Additionally, 12 hectares are preserved as a wild forest to conserve wildlife and native trees.

This coffee is an extremely rare cultivar from their Laboratory farm that grows new cultivars. The Rume Sudan was selected as part of Maria Pacas Incunables program which is the highest scoring, most remarkable coffees. They are vacuum packed into 15kilo bags and boxed to preserve every bit of the volatile compounds.

Coffee cherries are carefully picked at the farm, with any underripe, dry, or green cherries removed from the batch. The selected cherries are transported to our mill, Vivagua, where state-of-the-art pulpers remove the red skin, known as the "pulp", which is rich in nutrients.The pulp is dried at the mill and moved back to the farm weekly to be used as fertilizer for the trees.

In the washed process, the parchment coffee goes into fermentation tanks for 8-10 hours, depending on the outside humidity and temperature. Once the parchment has released all of the mucilage, it is washed and placed on patios or raised beds to dry.

These layers of coffee are moved 5-8 times daily. At night, the coffee is piled into small batches and covered with jute bags to protect it from dew or unexpected rain. The humidity of the coffee is measured daily. Once it reaches 12%, the coffee is packed into jute bags and stored in a designated warehouse area to maintain traceability. The time required for the parchment coffee to reach the desired humidity is typically 10-13 days.

NOTE: For this rare reserve coffee we roast it once a week on Mondays and ship same day. So get your order in by Sunday evening each week.
