BomBón - Jhoan Vergara, Colombia

BomBón is a Double Anaerobic processed coffee that undergoes two different anaerobic processing steps. First whole coffee cherries are processed in stainless steel tanks anaerobically for 72 hours, followed by depulping and a second longer anaerobic processing. Finally they use large dehumidifiers to perfectly dry the coffee preserving all of the aromatics and volatile compounds.

Producer:

Nestor Lasso and Jhoan Vergara looked at post-harvest processing in Acevedo, Huila and decided the small farmers around them were getting left behind on equipment they'd never afford alone. So they built a shared hub instead, and now every farmer who brings coffee through Peñas Blancas gets the same fermentation precision as anyone with money to burn. That's not charity, that's two guys deciding the tools shouldn't be the thing standing between a farmer and a great cup.

Place:

Colombia gets called the unfair origin because it genuinely has no business being this good at everything. Huila, Antioquia, Nariño, Tolima, 1,200 to 2,200 meters, harvesting nearly year-round. Some producers are running fermentation experiments that sound made up until you taste them. Others are quietly turning out microlots so clean and juicy they don't need any experiment at all. Both are Colombia.

Preparation Style: Omni, Espresso, and Filter

Our approach to both sourcing and roasting is that every coffee has to be good enough to stand on its own. No blenders, no base coffees, no filler. We take that same approach to roasting and preparation methods. All of our coffees are excellent in nearly every brew method from pour over to espresso.

That being said we have our preferences and so we label our coffees with Espresso, Filter or Omni as a quick way to guide you.

    I brewed this coffee as a pour over, and it was super forgiving. Compared to my others from Torque, this coffee was ready to go with only 4–5 days of rest. I was getting vibrant pineapple like acidity, lychee, and guava candy sweetness just as advertised. The only disappointing thing is it really started to go flat for me about two weeks past roast. Next time Ill go through it while the others rest and be more careful about storage.

    Bombon is such a vibrant coffee full of tropical fruit flavors like pineapple, and guava. It definitely gives me some stonefruit/peach tea vibes as well. Absolutely delicious cup of coffee thanks to the AMAZING sourcing and roasting at Torque Coffee!!!
