Jorge Enrique Zúñiga grows Colombia variety at 1,850 MASL on 3 hectares in Chalguayaco, Bolivar Cauca. This 104-pound hand-selected lot from Finca Vista Hermosa was one of the winners of the Subasta por la Paz auction. Two ferments, two floats, one ceramic tank. Bag ferment first, then de-pulp, then 48 hours in ceramic where the acidity sharpens and florals develop. Washed clean, then 12 days slow-drying on a parabolic dryer.

Nestled within the high-altitude terrain of Bolívar, Cauca, the Chalguayaco region stands out as a distinguished hub for specialty coffee production, utilizing its ideal microclimates and mineral-rich volcanic soil. Its meticulously hand-harvested community microlots are celebrated globally for their vibrant, fruity acidity and exceptionally sweet flavor profiles, cementing the region's prowess in Colombian coffee craftsmanship.

Our approach to both sourcing and roasting is that every coffee has to be good enough to stand on its own. No blenders, no base coffees, no filler. We take that same approach to roasting and preparation methods. All of our coffees are excellent in nearly every brew method from pour over to espresso.

That being said we have our preferences and so we label our coffees with Espresso, Filter or Omni as a quick way to guide you.
