This 104-pound hand-selected lot from Finca Vista Hermosa was one of the winners of the Subasta por la Paz auction. Two ferments, two floats, one ceramic tank. Bag ferment first, then de-pulp, then 48 hours in ceramic where the acidity sharpens and florals develop. Washed clean, then 12 days slow-drying on a parabolic dryer.
Nestled within the high-altitude terrain of Bolívar, Cauca, the Chalguayaco region stands out as a distinguished hub for specialty coffee production, utilizing its ideal microclimates and mineral-rich volcanic soil. Its meticulously hand-harvested community microlots are celebrated globally for their vibrant, fruity acidity and exceptionally sweet flavor profiles, cementing the region's prowess in Colombian coffee craftsmanship.
