Francisca Cubillo mills her own coffee, which sounds small until you realize almost nobody else in Costa Rica was doing it when she started. Third-generation, organic-certified, and stubborn in the best way, she and Oscar Chacón at Beneficio Las Lajas have been rewriting how the country processes coffee since before it was fashionable to talk about it. We've been buying from Francisca since 2009, and her processing decisions have rippled out past her own farm to change how the rest of the country thinks about the mill.
Place:
Costa Rica pushes processing harder than almost anywhere else, and the cup proves it. The country's micro-mills pioneered honey processing and never sat still after that, working across Tarrazú, Central Valley, West Valley, and Brunca at 1,200 to 1,900 meters. Harvested November through March. Two coffees grown a mile apart here can taste like different countries, which is the whole reason to keep paying attention.

Preparation Style: Espresso and Filter
Our approach to both sourcing and roasting is that every coffee has to be good enough to stand on its own. No blenders, no base coffees, no filler. We take that same approach to roasting and preparation methods. All of our coffees are excellent in nearly every brew method from pour over to espresso.
That being said we have our preferences and so we label our coffees with Espresso, Filter or Omni as a quick way to guide you.
