Producer:

The Martinez family has called Xalapa-Coatepec, Mexico, home for generations, and the farm there was started by Alejandro Martinez's great-great-grandfather, Antonio Martinez. Alejandro plants rust-resistant varieties in separate plots, so quality and yield can be compared plot against plot and he can see which varieties work on this land. Marsellesa and Mundo Maya have been consistent. Anacafe and Obata are the newer plantings, with fewer harvests behind them.

Place:

Coffee grows across Chiapas, Oaxaca, Nayarit, Puebla and Veracruz, at 900 to 1,800 meters, in highland forest and volcanic soil. Harvest runs November through March. Smallholder farms have put renewed attention on processing, and the cups have gotten cleaner for it, with balanced acidity and sweetness. Alejandro Martinez farms in Xalapa-Coatepec, Veracruz, and the 33 farmers of BASILIO farm in El Cuarenteño, Nayarit.

Preparation Style: Espresso and Filter

Our approach to both sourcing and roasting is that every coffee has to be good enough to stand on its own. No blenders, no base coffees, no filler. We take that same approach to roasting and preparation methods. All of our coffees are excellent in nearly every brew method from pour over to espresso.

That being said we have our preferences and so we label our coffees with Espresso, Filter or Omni as a quick way to guide you.
