Pink Borbon Thermal Shock DECAF - Jhoan Vergara, Colombia

Jhoan Vergara had this Pink Bourbon from Finca Las Flores in Acevedo, Huila, at 1,750 meters, decaffeinated with the sugarcane process. The cherry first goes through 36 hours of controlled anaerobic fermentation, 12 hours of oxidation, and 36 more anaerobic after depulping. A 30-minute soak in 50°C (122°F) water delivers the thermal shock, and dehumidifying machines dry it for 36 hours. Sweetness and clarity carry through.

Producer:

Nestor Lasso and Jhoan Vergara looked at post-harvest processing in Acevedo, Huila and decided the small farmers around them were getting left behind on equipment they'd never afford alone. So they built a shared hub instead, and now every farmer who brings coffee through Peñas Blancas gets the same fermentation precision as anyone with money to burn. That's not charity, that's two guys deciding the tools shouldn't be the thing standing between a farmer and a great cup.

Place:

Colombia gets called the unfair origin because it genuinely has no business being this good at everything. Huila, Antioquia, Nariño, Tolima, 1,200 to 2,200 meters, harvesting nearly year-round. Some producers are running fermentation experiments that sound made up until you taste them. Others are quietly turning out microlots so clean and juicy they don't need any experiment at all. Both are Colombia.

At Torque we believe in buying more coffees from fewer producers and fewer origins We go deep rather than wide. We focus our coffee sourcing to work with a smaller group of like minded coffee producers who share our vision for changing the world of coffee.

Preparation Style: Omni and Filter

Our approach to both sourcing and roasting is that every coffee has to be good enough to stand on its own. No blenders, no base coffees, no filler. We take that same approach to roasting and preparation methods. All of our coffees are excellent in nearly every brew method from pour over to espresso.

That being said we have our preferences and so we label our coffees with Espresso, Filter or Omni as a quick way to guide you.

Subscription Type: Modernist

This coffee will be featured in one of these coffee subscriptions.

Proportional Pricing

A minimum of 20% of this bag's retail price stayed in the country where the coffee was grown. Built into the price from the start, not sent back later. The higher the price, the more stays at origin. You don't have to trust us on it. The full math is public.

Sustainability Info

We aim for carbon beautiful, not just carbon neutral. Coffee farming done right stores carbon and protects forests, so we'd rather support producers who farm that way than just offset our own footprint. The full picture is on our Carbon Beautiful page.
